  1. Preheat your smoker to 225 degrees using some type of mild wood for smoke. Fruit woods work best in my opinion.
  2. Cook macaroni as directed on package.
  3. Over medium heat wisk together butter and flour in a saqucepan until combined into roux
  4. Add cayenne pepper and mustard powder to mix.
  5. Wisk in the half and half slowly to combine.
  6. Stir in cream cheese, cheddar cheese, and smoked gouda until melted and combined with mixture
  7. Add in prepared pasta
  8. Melt butter for topping
  9. Combine ingredients for topping with melted butter
  10. Add pasta and sauce mix to aluminum pan.
  11. Top with crumb topping mix
  12. Put pan on smoker to cook for 1 hour.
  13. Serve and enjoy!
